You should check out audacity.sourceforge.net. It is
an open source audio editor that supports VST plugins.
Also, it is pretty easy to record with supercollider
2.1.16 which is now free (http://www.audiosynth.com)
It has the added advantage of being utterly supportive
of intonation research.

For example, it has incremental midicps conversion so
midinote 60 to 67 to 60 to 67.02 or even 60 to
67.01955 where the .01955 is in cents. There is also
cps to midi and ratioToMidi functions, etc. I am
finding it very useful for checking out intonation
concepts. The higher level functions of the language
are useful investigating adaptive tunings, etc.

Anyway, creating an audio file with supercollider is
very easy just using the .record function.

Thanks Scot. I'll check this one out for my own use as well.

Kind Regards

SuperCollider is not available yet for OSX (at least not in native
form). Audacity, as well, only runs under Mac OS 9. This is not to discourage you, but just so you know that these programs don't take advantage of new OSX features. Really, the only problem with Audacity under OSX is that it does not record (to record, you have to reboot using 9.2), but it will edit and play under OSX.

I completely forgot about Audacity, check out http://audacity.sourceforge.net/mac.php?lang=en for the OS 9.2 version.
