sounds like you're doing well with the Ztar!

be forwarned: my Ztar mapping of Canasta fits on one channel
but "wastes" nearly a whole string, because 30 of the notes
fit well on 5 strings and one string is needed only for the
odd single note that completes Canasta.

but despite the "waste", i *like* that mapping, because that
odd single note makes it obvious where the octaves are!

the top message here gives my Ztar Canasta mapping:
/tuning/topicId_22430.html#22712?expand=1

BTW, you mentioned the Mini-Z as being better for the
"2-hand tapping" technique ... that's precisely the model
i plan to eventually purchase ... partly because it's
more appropriate for my not-much-of-a-guitarist (but
pretty-good-keyboardist) skills, and partly because it's
the cheapest model, and i also like the look and
portability of it the most.

the StarrLabs Z-Board is another good choice for those
with similar considerations, and it offers double the
note capacity of the Ztar.

(now, that's enough! you're not going to get me
sucked back into tuning-list addiction!

... not just yet, anyway ...)

i should have mentioned ... one could use a different
color for the key top of the "odd single note", making
it *really* obvious where the octaves are.
