Meaning an ornamental pitch can be anything, at least anything else than
the sruti according to my definition. And the ornaments _will_ be
flexible, will be influenced by the mood and physical shape of the
performer, by his of her developed of developing style, by other
ornaments that came before or are meant to came in the next moments...

The number of ornamental pitches will depend on the precision of your
measurement. If you also take into account dynamics that veil the
beginnings of endings of a note, then there is virtually nothing
objective left in such measurements. Maybe "why" is a better question to
ask: Why is a sweep long or short? Why does it start from a specific,
fixed pitch or from a certain distance from the target note?
