two-dimensional keyboard

I am making a two dimensional MIDI keyboard,
with anywhere from 196 to 294 keys.
I will be composed of 4 to 6, 49 key keyboards.
Probably use the 6-6 instead of the 5-7 configuration.
I want to expirement with various key arrangemets.
In otherwords will re-map the keys in various arrngements
to facilitate the fingering to the style of music
I will be playing.

I may be using Cubase 3.7 or 5 or maybe Logic.
Do these programs have extenisive keyboard mapping
capabilities? Cubase has a drum mapping but am not
sure if this accomplish odd mapping patterns.
I know Windows has universal keyboard
mapping but I need mapping inside the sequencer or through a
plug-in as the mapping may change from song to song.
I am starting my studio from scratch so am very
flexible as what software to use.

Do you have any suggestions?
