Csound and MIDI file formats

You should definitely look into Csound.

None of the versions of Csound that I've seen work this way.
Some have interactive user interfaces for running the program,
but normally you write a score in advance and compile it with
an orchestra, that you also write in advance.

Some people have also used MIDI-to_Csound conversions. If you
want to know more about that, ask the list and not me, because
I haven't worked with that.
