My guess is "hide glue" or "rabbit glue", which were once somewhat
ubiquitous, I gather. Carpenter's wood glue tends to permeate the
piece, so you can't very well take it apart, later. I've found the
Glue-All works nicely for restoring pottery, etc.

Hot hide glue is one of my first choices but it wouldn't be my first
guess.

What would your first guess be?

Do you use it as part of your restoration work, primarily, or are you
using it to make new things, too?

Maybe casein or else glue-all, maybe urea-formaldehyde
